Oxygen is essential to our survival however its use by the cells of our body is not without any danger. A significant part (1-2%) of the oxygen we breathe is transformed into a toxic by-product called free radicals (1). Radicals can react and damage cellular components like proteins, lipids and DNA (2). Biomolecules oxidation by free radicals are implicated in several pathologies as coronary diseases (arteriosclerosis), neurodegenerative sicknesses (Parkinson, Alzheimer) and ageing (3-7). Many enzymes and small molecules allow the elimination of radicals particularly vitamin E and C (8). As we age, the generation of free radicals increases and their quality becomes superior to the antioxidant defenses capacities. This unbalance is called oxidative stress and will lead the organism to a pathologic state (9). The consumption of components rich in antioxidant can attenuate the impact of this oxidative stress. Quebec’s boreal forest which has more than 850 species of vascular plants represents an abundant source of components useful in the treatment and in the prevention of different sicknesses (10). Many plants of this vast ecosystem hold a high concentration of antioxidant components. Wild blueberry, cowberry, cloudberry are generally considered as references due to their high content in antioxidant components.
